Fish is a perishable food requiring proper handling and preservation in order for a long shelf life and to retain a desirable quality and nutritional value. Processing of paddlefish meat is the preliminary processing of raw fish into various product forms such as whole-dressed, bullets, fillets, and steak for the meat. Processing of value-added products such as smoked or marinated meat or roe into caviar are specific product forms often desirable to retailers and consumers.
