Fish is a perishable food requiring proper handling and preservation in order for a long shelf life and to retain a desirable quality and nutritional value. Processing of paddlefish meat is the preliminary processing of raw fish into various product forms such as whole-dressed, bullets, fillets, and steak for the meat. Processing of value-added products such as smoked or marinated meat or roe into caviar are specific product forms often desirable to retailers and consumers. Processing requires proper training to produce these prdocuts and must follow local, state and federal regulations. For more information contact your local health department.
